Blackberries!

Jul
24

Love this time of year, when the blackberries are ripening behind the barns and I can go get scratched up all over and sucked down by ticks–all in search of a bucket of fresh berries. Have no idea why this is so alluring, and yet it is.

After soaking and cleaning, I ended up with enough for a small cobbler. Look at all the fun veggies that are fresh now–new potatoes, squash, zucchini, peppers, corn, tomatoes, cucumbers…..

How’s your garden doing? (The squash, zucchini, tomatoes, cucumbers and peppers are from the garden, the corn and potatoes are from the farmers market.)

My favorite cobbler recipe is SO easy–one cup of flour, one cup of sugar, a pinch of salt, mixed with one egg then just thrown on top of the fruit. Cut a stick of butter on top and bake for about 30 minutes at 350.

Does that look good or what? Vanilla ice cream on top = perfection!!

The Slanted Little House

"It was a cold wintry day when I brought my children to live in rural West Virginia. The farmhouse was one hundred years old, there was already snow on the ground, and the heat was sparse-—as was the insulation. The floors weren’t even, either. My then-twelve-year-old son walked in the door and said, “You’ve brought us to this slanted little house to die." Keep reading our story....
