Caramelized Banana Crumble

I had a hankering for something banana, but I couldn’t find the right banana thing that fulfilled all my longings. I wanted something brown sugary banana, and I wanted it to be a sort of breaded-ish banana thing, but not banana bread. Or banana cake. Or banana muffins. I put my ideas together and made a caramelized banana crumble.

If you have some kind of odd banana longing today, maybe this is for you!

The bananas for this recipe should be firm.

How to make Caramelized Banana Crumble:

8 medium bananas
1/4 cup butter or margarine
3/4 cup brown sugar
3/4 cup orange juice (or rum! go ahead)
1 teaspoon ground cinnamon

Crumble topping–
1 cup all-purpose flour
1 cup sugar
1/4 teaspoon salt
1 large egg
1/2 cup butter or margarine

Melt butter in a large skillet over medium-high heat. While melting the butter, cut the bananas in half.

Then slice each half lengthwise.

Add the brown sugar to the melted butter then place the banana slices in the pan.

Cook for about one minute. Carefully turn the bananas in the mixture. Pour in the orange juice (or rum) and add the cinnamon.

Turn the heat up to high and boil down the bananas in the sauce for several minutes. Keep an eye on the sauce–don’t let it burn. You’ll end up with a nice, thick sauce.

Transfer the bananas and sauce to an 8 x 8 greased dish. In a medium-size bowl, combine flour, sugar, salt, and egg. Stir into a crumble mixture. Spoon over the bananas.

Cut butter over the top. Bake at 350-degrees for about 40-45 minutes, or until crumble top turns golden brown.

Serve warm with vanilla ice cream–at once!

I love this one. It’s easy, delicious, and just a little bit different. Good any time, but I think it would also make a great company dessert because it’s unique. You could also add a handful of raisins and/or nuts, or a hint of ground cloves for a more spicy sauce. Try it and let me know!

    I make something very similar to this, but without the crumble topping. The orange juice adds just the right flavor note. I cook the caramelized bananas and serve them over vanilla ice cream. Sometimes, for company, I add a little brandy and flame them, and spoon the still-flaming mixture over each guest’s dish of ice cream. We call that Vesuvius bananas. But I think your banana crumble version would be a nice variation. I love fruit crumbles.

Even more so because I was thinking just today that if I had to look at another piece of banana bread, or make another loaf of banana bread, I would just start screaming.     This looks fantastic! Like a poor man’s Bananas Foster. Well, maybe not a poor man but a man who is afraid to light food on fire. I think Bananas Foster is what whaledancer described. I have been craving bananas, oddly when I was grocery shopping yesterday, I bought strawberries instead. Total impulse buy.

    It was very very good, thank you for sharing the recipe. I made it yesterday with 6 bananas about to go bad that I needed to use up. I wish I’d had the other 2 bananas so I had more to eat!
