Flower Jellies (BBB)

It’s spring! I think! Somebody make sure it doesn’t snow again. Spring means wildflower time–and garden flower time, too. There are lots of wild and garden flowers that make wonderful jellies (with gorgeous natural color). Herbs, too. And practically for free, minus the pectin and sugar! (If you already have jars. You have jars, don’t you?)

    We have a yard, not a lawn, and the violets are blooming profusely. Wonder how many I would need to pick to make jam, and wonder how stiff I would be after picking that many violets?? I may have to try it though. BBB please.

    I must say I’ve never eaten flower or herb jellies…just the old-fashioned kind of blackberry, stawberry, grape, and pretty much any kind of berry…oh, yes and apple butter, too…yummmmoooo!

    I have plans to make violet jelly this year. I have a woodland and fields full of violets, some purple and some yellow. I might try dandelion jelly too and dandelion syrup!

    When I first read “flower jellies” I pictured those jelly shoes they used to make from rubber, with flowers painted on them. Pretty picture – then your posting opened & I saw this is something edible! I’d love a BBB

    I just found a neighbor who was complaining that she has eight fruit trees in her backyard, and they make a mess every fall. EIGHT FRUIT TREES! And she doesn’t want any of the fruit. I now have permission to glean all eight trees this fall for anything I want to keep.

    I’d love to be able to can some of the produce and give it back to her as a thank you!

    I noticed that on the list of flowers that were edible, that dandelions were listed as only petals are edible. That isn’t true, as the leaves (particularly the young ones) are edible. They taste like spinach, so my daughter says. :yes: They are extremely healthy for you.

    Dandelions can be used to treat diabetes, I understand, and the latex in the sap is good to treat warts.

    Dandelion jelly is very mild. I love it. Just make sure that you only use the yellow parts though…pick off the white, as it is bitter. I found a great recipe for Amish Dandelion Jelly when I did an online search.
