In the past year, I’ve made huge strides in my cheesemaking thanks to my cheese challenge with New England Cheesemaking. It all began with a profile about me on the blog at New England Cheesemaking. (Check that article out if you haven’t read it!) Before my cow could say moo, I was opening my “cheese lab” to make a different cheese every month, writing about it here on my blog and on the New England Cheesemaking blog. What an experience! I want to thank Ricki, the Cheese Queen, for letting me do it, and Jim Wallace, the NEC cheese expert, for answering so many dumb questions from me, and especially Jeri Case, the “NEC Newsletter Queen” for putting up with me (and also for the day she bought all those gallons of store-bought milk to help me test one of my crazy cheese ideas).

I’m not finished making cheese, but in the coming months, I’ve got a number of other projects pressing on me, so I won’t be writing about cheese as much. But!     I have been looking for information to grow, preserve, and produce my own foods and I believe I found the best here. I began canning this year and would love to learn to make the cheeses you have and would like to begin by winning this kit. I have tried the Mozerella and ricotta cheese kit from the Cheese Queen before but would like to experiment with the other cheeses and perfect my previous cheese making experience. Thanks!!!!

    I would love to win the fabuloso cheesemaking supplies!! Especially since the whole reason I found out about CITR was through Ricki’s Moosletter – and for that I am forever grateful.     A VERY interesting read. I noted the use of a stainless steel press, while on other web-sites I see people using 6″ schedule C PVC with hole cut/drilled into it. There are arguments that the PVC can impart a taste into the cheese yet I see people still using it. I’m trying to get enough experience with soft cheeses before attempting a hard cheese like cheddar, or my ultimate favorite – blue. Had great results with cottage, and mozzarella which in hindsight are all too easy to make.
