
This recipe was submitted by my Aunt to a cookbook her mobile home community was publishing as a fundraiser. She credits her friend Alberta as her source for it. The meunster cheese holds up and the slices keep their shape nicely. It is a delicious recipe for low carb dieters too.

Prep Time: 15 mins Cook Time: 45 minutes or until firmIngredients
2 (10-oz) pkgs frozen chopped spinach
1 (8-oz) c. part skim ricotta cheese
3 eggs
dash or two onion salt
1/4 c. parmesan cheese (optional)
1 lb. (approx.) thinly sliced Muenster cheese
Directions
Preheat oven to 350F.
Cook spinach according to pkg directions, and squeeze dry.
Mix ricotta, eggs, onion salt, and Parmesan cheese (if desired). Add squeezed chopped spinach and mix well.
Line pie plate with Muenster slices, add spinach mixture, cover top with more Muenster cheese slices.
Bake 45 mins. until golden brown and firm.
Let cool slightly before slicing into 8 peices.
