Banana Pepper Rings

Jun
21

My banana peppers are doing great with all this hot weather we’re having. I would love to can some of the banana pepper rings like you buy for salads, sandwiches, pizza’s, etc. I’m looking for a recipe that keeps the rings crunchy not soggy. Thanks!

Oh, this is one I have been working on and I am getting closer…. I LOVE the Oliverio’s hot pepper rings in vinegar! So far, what I have decided is that for any pickle,I soak in cold salt water overnight, rinse throughly, and then when canning I definitely add Pickle Crisp. Best so far. Still struggling with the amount of vinegar vs. water. May try straight white vinegar next time.

How’s the testing going girls? I have a few pints I want to try. Did either of you succeed?. And are you willing to share some more wisdom :)
