
I used Sweet Baby Ray’s barbeque sauce for my dish and it was great.

4 boneless chicken breasts
1 green pepper, cut into slices
4 medium red potatoes, sliced
1 small red onion sliced thinly
1 20 oz can of sliced pineapple,drained, reserve juice
1 18 oz bottle of barbeque sauce?
Directions
Preheat oven to 450. Lightly grease a medium casserole dish.
Place chicken in baking dish. Arrange potato slices, peppers, onion and pineapple around chicken. Pour the reserved pineapple juice over all of it and top it all off with the barbeque sauce.
Bake for 1 hour in your preheated oven, or until chicken juice runs clear and potatoes are cooked through.

I was skeptical of how this dish would turn out but this really is a great(and simple)recipe. I was very pleasantly surprised at how tender the chicken was and the vegetables were crisp and so flavorful. Served over white rice and it was a huge hit. Thank you for posting! Yum!
