
These are based on my favorite banana bread recipe, which I found on FoodNetwork.com. This recipe only calls for 2 bananas and makes 12 muffins. Perfect for a snack, or top with whipped cream for dessert.

Prep Time: 10-15 minutes Cook Time: 25 minutesIngredients
1/3 cup Butter or Dairy-free Margarine
2/3 cup Sugar
2 small Eggs or 1 XL Egg
1 tsp Vanilla
2/3 cup Flour or Whole Wheat Flour (I usually use a mix of the two)
1/2 tsp Baking Soda
1/4 tsp Salt
2 very ripe Bananas, mashed
Directions
Heat oven to 350°F. Prepare muffin tins with grease or paper cups.
Cream butter/margarine & sugar. Mix in egg & vanilla. Add dry ingredients. Stir in bananas (mix may look odd at this point). Fill muffin tins to 2/3 full.
Bake 25 minutes, or until toothpick comes out clean.

I only had 2 ripe bananas so your recipe was perfect. Just made them and…YUM! They passed the DH taste test with flying colors. Now he wants a couple more…
