Birds of Paradise

Elegant easy dinner.

Difficulty: Easy

Servings: 4

Ingredients

4 – 5 boneless, skinless chicken breasts
2 eggs
3 – 4 Tbsp. milk
1 1/2 cups grated parmesan cheese (real grated – not the stuff in the can!)
1 stick butter
•1 cup cooking sherry


Directions

Wash and trim the chicken breasts.


Whisk the eggs and milk in a small bowl.

Pour the cheese onto a piece of wax paper.

Dip the chicken breasts into the egg mixture and roll them in the cheese.

Melt the butter in a frying pan on medium-high heat.

Put the coated chicken into the pan and brown it on both sides.

Then pour the sherry in the pan after the chicken is brown.

Cover the pan and let the chicken simmer for 30 minutes.
