Servings: 2 loaves
Prep Time: 1 to 2 hour plus Cook Time: about 30 minutesIngredients
1 Tablespoon yeast
1/2 Tablespoon sugar
3/4 cup warm water
1 1/2 cup buttermilk
3 Tablespoon honey (I use raw Buckwheat honey)
2 Tablespoons melted butter
1 teaspoon salt
1 Tablespoon black sesame seed
1 Tablespoon millet
1 Tablespoon sesame seed
1 Tablespoon golden flaxseed
1 Tablespoon poppyseed
1 Tablespoon sunflower seed
1 Tablespoon cornmeal
1/2 cup rolled oats
1/2 cup oat flour
1 1/2 cup whole wheat flour
3 1/2 cup bread flour
Directions
Dissolve yeast in warm water and 1/2 Tablespoon sugar. Add salt, honey, buttermilk. Add all seeds, cornmeal, rolled oats. Add whole wheat flour and oat flour. While mixing slowly add bread flour. May need more or less bread flour just add enough till nice and elastic. Knead well with hands or mixer.
Place in a greased bowl and cover with towel, let rise in a warm place till doubled. This is a heavy bread and takes awhile to rise, placing in a warm area is helpful.
Punch down and divide in half. Shape into loaves and place in greased pans. Cover and let rise till doubled again.
Bake in a 350 oven about 30 minutes or till the tops are golden brown and hollow sounding when tapped.
