Blueberry Chutney

This is a favorite amongst our family and friends. The ingredients all combine together for a wonderful mix of flavors.

Difficulty: Easy

Servings: 12 to 16

Prep Time: less then 30 minutes   Cook Time: 2 minutes

Ingredients

1 cup fresh or frozen blueberries, thawed, drained
2 Tablespoons chopped onion
1 1/2 teaspoon grated fresh or dried ginger root
1/4 cup firmly packed brown sugar
2 Tablespoons cider vinegar
1 1/2 teaspoons cornstarch
pinch salt
1 cinnamon stick
1 package cream cheese

Directions

In a saucepan, combine blueberries, onion, ginger root, brown sugar, vinegar, cornstarch, salt and cinnamon stick. Mix well.

Bring to a boil over medium heat, stirring frequently. Boil for 1 to 2 minutes and remove the cinnamon stick. Cool slightly. Cover and refrigerate until completely cooled.

Spoon over an 8 ounce block of cream cheese. It looks like its too much, but you want to pour all of it over the cream cheese. Serve with favorite crackers.
