
Delicious cold pasta, great for summer picnics.

Prep Time: 20 minutes Cook Time: varies-5-10 minutesIngredients
1 package of tri color pasta
1/2 c Olive Oil
1 small package of pine nuts (or sesame seeds shelled)
1 small cucumber peeled and chopped
1 large tomato chopped (or grape tomatoes)
1 small can of black olives
1-2 packages of feta cheese (I like a lot)
1 can of artichoke hearts
1 small package of shredded romano cheese
Directions
Boil pasta according to directions and drain.
Heat olive oil with pine nuts in a small skillet on medium. Watch carefully and take off the heat when the pine nuts become a golden brown.
Meanwhile chop all other ingredients and add to a large bowl with pasta, add feta cheese and stir well. After the nuts are a golden brown pour the nuts with the olive oil into the pasta and stir add romano cheese.
