Chicken Cordon Bleu Casserole

I found this on copykat.com, posted by Ro-Ro. I cut the recipe in 1/2 and put in a sprayed 8×8 pan. I make croutons from stale bread or french bread, or you can use panko. I cook it in the toaster oven while it is so hot. This is incredibly tasty. Hope ya all like it as much as we do.

Difficulty: Easy

Servings: 6 to 8

Ingredients

4 c. cooked chicken or turkey, cubed
2 c. ham, cubed
1 c. shredded Swiss cheese
diced onion (optional, I don’t use)

Sauce:
1/4 c. butter
1/3 c. flour
2 1/4 c. milk
salt and pepper to taste
1/2 tsp. dry mustard (I use a tiny squirt of reg. yellow mustard)

Crunchy topping:
1/2 stick butter, melted
2 1/2 c. coarse bread crumbs
1/2 c. shredded cheddar cheese

Directions

Layer chicken (or turkey), ham, Swiss cheese, and onion (if using) in a 9×13 baking dish.

Sauce:
Melt butter in saucepan. Stir in flour, salt and pepper. Cook stirring 1 minute. Blend in milk and mustard. Cook until thick.

Crunchy topping:
Mix all together.

Bake 30 min. in 350 preheated oven.
