Chicken Oscar

Great meal for company, great, though, any day of the week.

Difficulty: Intermediate

Servings: 4

Prep Time: 30 minutes   Cook Time: 35 minutes

1 pound asparagus steamed and chilled to stop cooking;

4 boneless, skinless chicken breast seasoned with salt, pepper, dill weed;

1 T. olive oil;

8 ounces of real or imitation crab flaked. (I prefer the imitation crab);

2 cups shredded monterey jack cheese;

Hollandaise sauce

Season chicken breasts with salt, pepper and dill. Place in non-stick skillet with 1 T olive oil. Brown both sides of chicken breast and remove to 9X13 baking pan. Pile each chicken breast with asparagus and then crab. Sprinkle shredded cheese over all. Bake in 350 degree oven until juices run clear. About 35-40 minutes. Serve with Hollandaise sauce over the top of each serving.
