
My sister’s recipe…a family favorite. Great to take to a pot-luck gathering.
Difficulty: Easy
Servings: 1 loaf
Prep Time: 10 min. or so Cook Time: 1 hr 15 min.Ingredients
2 cups flour
3/4 tsp baking soda
1/2 tsp salt
1 cup sugar
1/4 cup butter, softened
1 1/2 cup mashed banana, approx. 3
1/2 cup egg substitute or 2 eggs
1/3 cup plain yogurt, lo fat
1/2 cup dark choc chips
Directions
Combine flour, baking soda and salt. Set aside.
Beat sugar, butter in large bowl till well blended. Add banana, egg, yogurt, and blend well. Add flour mixture and beat till moist on low.
Place chocolate chips in a bowl and microwave on high 1 min, stir well, cool slightly.
Add 1 cup batter to chocolate and stir till combined.
Spoon into greased loaf pan, alternating chocolate and plain. Swirl together with knife.
Bake at 350 degrees for 1 hr 15 min.

I finally got to make this, and it’s excellent! I like that the marbling leaves a bite of banana, a bite of chocolate and the banana is not overwhelmed by the chocolate. Very moist and delicious! Perfect with a cuppa tea!
