This is my husband’s favorite cake. I clipped this recipe from the Chicago Tribune years ago (it had won a weekly recipe contest, where the prize was $10 back when $10 went a lot further than it does now). You can’t taste the applesauce, but it makes the cake very moist.
Difficulty: Easy
Servings: 10-12
Prep Time: 15 minutes Cook Time: 30-40 minutesIngredients
½ cup oil
1-1/2 cups sugar
2 eggs, beaten
2 cups all-purpose flour
½ tsp. each: cinnamon, salt
2 cups applesauce
1-1/2 tsp. baking soda
3 tbsp. cocoa
2 tbsp. sugar
½ cup chopped nuts
1 cup chocolate pieces
Directions
Mix oil and 1-1/2 cups sugar; beat in eggs. Stir in flour, cinnamon, salt, applesauce, baking soda and cocoa. Pour mixture into a greased and floured 13 x 9 x 2 inch pan. Sprinkle top of cake with 2 tablespoons sugar, nuts, and chocolate pieces. Bake at 350 degrees 30 to 40 minutes. Cover with foil if top becomes too brown. Serve with whipped topping, if you like.
