Corn Gratin

This is a Jacques Pepin recipe, and it is so easy and delicious!

Difficulty: Easy

Servings: 4

Prep Time: 10 minutes   Cook Time: 35 minutes  

Ingredients

4 ears corn
2 large eggs
2 Tbsp. flour
Salt and pepper to taste
1 cup half and half
1/2 cup Parmesan cheese

Directions

Preheat oven to 375 and butter a 1 quart gratin dish.

Remove corn from the cobs. Place corn kernels, eggs, flour, salt, pepper, and half and half in a food processor and process until smooth.

Pour mixture into the buttered gratin dish. Sprinkle Parmesan cheese over the top. Bake on upper-middle rack of the oven for 30-35 minutes until just set and golden on top.
