After Christmas last year, I had a ton of homemade cranberry sauce left over, so I modified my usual scone recipe to use it up and they were probably my best scones ever.
Difficulty: Easy
Prep Time: 10 min Cook Time: 25 minIngredients
2 c. flour
1 Tbsp baking powder
1/4 c sugar
1/2 tsp salt
1/4 c. cold butter or margarine
1 egg
1 1/4 c. cranberry sauce
1/2 c. white chocolate chips
1/2 c. dried cranberries
1 tsp vanilla
Directions
Combine flour, baking powder, sugar, and salt; cut in cold butter or margarine. Whisk together egg, cranberry sauce, white chocolate chips, dried cranberries, and vanilla. Mix into flour mixture just until combined. Pat dough into a circle (about 1″ thick) on a greased baking sheet and cut into wedges. Bake 25 minutes at 400 degrees, then cut apart.

Just found this. Sounds great! Was your homemade cranberry sauce made with the chopped-up oranges and cranberries, or just plain cranberries?

Hi brookdale! I make mine with orange zest, so yes, that orange flavor is in there. I’m sure cranberry sauce with chopped oranges would be fine, though possibly a bit sweeter (could be a plus or a minus, depending on your point of view!)
