Easiest Chicken Casadia

This is a super yummy really easy lunch/dinner.

Difficulty: Easy

Servings: Approx. 5 to 6

Prep Time: 1 hr.   Cook Time: 30 mins.  

Ingredients

2 lbs chicken breasts or thighs
4 cups water
2 pkg. taco mix
1 pkg of 10 flour tortillas (room temp)
1 pkg cheese (I use the 4 cheese taco blend)
Sour cream, salsa or anything else you like to put on yours

Directions

Put chicken in pot, brown slightly, pour taco seasoning mix and then water. Bring to a boil, turn down to a simmer. Simmer for about 1 hour. Pull out chicken and let cool slightly.

While chicken is cooling, bring sauce back up to a boil until about half-way reduced. Pull apart chicken.

Fill the flour tortillas with chicken. Roll up tortillas.

Place in a 9X13 GREASED pan. Cover with cheese and sauce.

Bake in 350F oven for about 30 minutes or until preferred doneness.
