Fish Batter (similar to Long John Silver's)

My kids love Long John Silver’s chicken planks. I went on an internet search for a batter recipe similar to LJS. I found this one and it was a winner!

Difficulty: Easy

Servings: 4 - 6

Prep Time: 5 minutes   Cook Time: about 5 minutes per fryer  

Ingredients

3/4 cup flour
2 tablespoons cornstarch
1/4 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
3/4 cup water

Directions

Sift dry ingredients. Add water and mix well. Use to coat fish or chicken fillets. Cover the fish or chicken completely with batter; deep fry until a nice golden brown.
