
Almost like a freezer relish but made with cabbage. Especially nice to have on hand for quick additions to hot dogs!

Ingredients
1 medium head cabbage, about 2 lbs shredded or 2 small heads, 1 green, 1 red (this will make for a pinkish slaw!)
1 tsp salt
2 cups sugar
1 cup cider vinegar
1/4 cup water
1 tsp each: celery seed, mustard seed
1 carrot, shredded
1/2 cup finely chopped green pepper
Directions
Combine cabbage and salt; let stand for 1 hour.
Bring sugar, vinegar, water, celery seed and mustard seed to a boil. Boil for 1 minute. Cool.
Add carrot, green pepper and vinegar mix to the cabbage & salt. Stir to combine. Put in freezer bags or jars. Freezes up to 2 months.
Remove from the freezer a couple of hours before eating.
