Iced Cinnamon Strips

This is a sweet vegan snack I make when Weston’s girlfriend is visiting! If she’s not here, I make it with milk. It’s also a fun weekend breakfast treat. This is a Grandmother Bread recipe.

Ingredients

1 1/2 cups warm water
1 teaspoon yeast
1/2 teaspoon salt
2 tablespoons sugar
3 1/2 cups flour

ICING:
1 cup sifted powdered sugar
1/2 teaspoon maple or vanilla extract
2 teaspoons water*

You can use milk instead of water if you’re not making this vegan.

Directions

In a large bowl, combine water, yeast, sugar, and salt. Let sit five minutes. Stir in first cup of flour with a heavy spoon. Add the rest of the flour a little at a time as needed, stirring until dough becomes too stiff to continue stirring easily. Add a little more flour and begin kneading. The amount of flour is approximate–your mileage may vary! Continue adding flour and kneading until the dough is smooth and elastic. Let dough rise in a greased, covered bowl until doubled. (Usually, about an hour.) Uncover bowl; sprinkle in a little more flour and knead again.

Divide dough in half. Roll out each half on a greased pizza pan to about a 12-inch circle. Brush with melted butter. Sprinkle with sugar and nutmeg.

Bake for 30 minutes at 350-degrees. Using a pizza cutter, slice into 1 1/2-inch wide strips, about 3 inches long. Drizzle with icing.

To make icing, combine powdered sugar with extract and water (or milk) and stir to drizzling consistency.
