Italian Meatball Soup

I received the original recipe from Susan Shakespear and just love it! Easy to put together and vary!

Difficulty: Easy

Servings: 4

Prep Time: 30 min   Cook Time: 15 min  

Ingredients

1 pound lean ground chuck
1/4 cup bread crumbs
1 tablespoon parsley
1/2 tsp onion powder or 1/4 cup finely chopped fresh
1 tsp dried oregano
1/2 tsp salt
1/2 tsp black pepper
1/4 tsp cayenne pepper
1 quart chicken broth, in medium pot
2 cups tortellini, cheese-filled or meat filled

Directions

Mix chuck, bread crumbs, parsley, and spices. Make into meatballs; cook on aluminum foil in the oven at 350 until browned, about 15 minutes. Add to the chicken broth. Bring up to a simmer. Add in tortellinis. Cook the tortellinis and serve. Could use Italian sausage instead of meat combination. A simple soup that allows you to adjust to whatever you want: add things like barley, rice, abc noodles, can of tomatoes, cooked navy beans…
