I love the idea of soup mixes, too. I’m going to be doing a support group for work about freezer cooking in a few months, so I miht have more to share here!

Start rice cooking. I use Alton Brown’s method.

Combine dry ingredients in a large bowl. Then combine wet ingredients together and add to dry ingredients. Mix well and pour into 2 greased and floured loaf pans.

I just made 9 pints of this. Only 8 would fit in the canner, so the 9th pint sat in the fridge for a few days. Tried it tonight, and it was GOOD. Can’t wait to try the canned version…I hope it truly does retain its crunchiness. Thanks!
