This was my Grandma’s recipe…very moist coffee type cake. I have shared this recipe with friends who have modified it and added ginger. I’m not a fan of ginger. Takes few ingredients and sooo easy to make. I bake it in a round cake pan and cut like a pie…just like my Grandma did.
Difficulty: Easy
Servings: 8-10
Cook Time: 45 minIngredients
1/2 cup molasses
1 tsp soda
1/2 cup boiling water
2-1/4 cup flour
1 cup sugar
1/4 tsp salt
1/2 cup melted butter
Directions
Place molasses in a good sized bowl. Add soda and boiling water. Stir to mix–mixture will rise and get frothy. Let cool.
Blend together flour, sugar, salt and melted butter. Reserve 2 Tbsp of this for topping.
Stir flour mixture into molasses and blend until just moistened. Place into greased round cake pan. Sprinkle with reserved flour mixture and bake at 350 for approx 45 minutes.
