Overnight Oatmeal with Fruit

The perfect breakfast on cold mornings. A great way to get something good into your family and an excellent way to incorporate your dried fruits into recipes.

Difficulty: Easy

Servings: 4

Prep Time: 5 minutes   Cook Time: 6-8 hours  

Ingredients

2 cups milk
2 tablespoons honey
1 tablespoon butter
1/4 teaspoon salt
1/2 teaspoon cinnamon
1 cup dry rolled oats
1 cup apples, chopped
1/2 cup raisins
1/4 cup nuts
1/2 cup half & half

Directions

1. Spray inside of slow cooker with spray oil.
2. Combine all ingredients except half & half in slow cooker.
3. Cover and cook on low overnight, ideally 6-8 hours. The oatmeal is ready to eat in the morning.
4. Stir in the half & half just before serving.

That’s the recipe as originally given to me. I have adapted to my families tastes by:

using dehydrated apples, raisins and craisins as the fruit mix.

adding a 1/4 cup more milk so the fruit rehydrates well.

using a timer and set the crock-pot to cook for 6 hours. We like the texture best if not overcooked.

As a special treat I’ll use raw, whole milk and no butter. It’s like eating dessert for breakfast! We particularly like dried peaches and mango in the oatmeal.
