Potatoe Crust Quiche

Good use for extra eggs and fresh spinach or asparagus from your garden.

Difficulty: Easy

Servings: 8

Prep Time: 15 minutes   Cook Time: 45-55 minutes total  

Ingredients

1 Large potato, sliced thin
8 eggs
1/4 cup milk or fat free 1/2 & 1/2
1 teaspoon Italian seasoning
3/4 teaspoon salt
1/2 teaspoon pepper
1 Tomato, sliced
2 cups baby spinach leaves
3 oz. shredded cheese, cheddar, swiss or cheese of your choice

Directions

Preheat oven to 375 degrees
1.Spray large pie dish with non-stick spray
2.Layer potato slices on bottom and sides of pie dish. Also cover any holes or spaces.
3.Bake 15 minutes at 375 degrees.
4.Whisk together eggs and milk. Add seasonings and whisk together.
5.When potatoes are done par baking, layer spinach and then cheese.
6.Pour egg mixture over top. Layer tomatoes on top of eggs.
7.Bake for 30-40 minutes at 375 degrees or till eggs are set.
8.If desired, broil quiche 1-2 minutes to brown top slightly.
8.Remove from oven. Let cool for 5 minutes before slicing.

Crumbled sausage or bacon can be added to egg mixture and instead of spinach, asparagus spears can be placed on top before baking.
