
I wanted a grain side dish that would benefit from the addition of preserved lemon. This fills the bill nicely.

Prep Time: 10 min Cook Time: 30 minIngredients
2 cups couscous
2 cups water
2 tablsp butter
1 cup onion, finely diced
salt, fresh ground pepper
1 cup toasted pine nuts OR 1 cup chopped pistachios
1 tablsp finely chopped preserved lemon
1 tablsp finely chopped fresh flat parsley leaves
Directions
Bring water to boil in a medium sauce pan. Stir in couscous. Cover and remove from heat. Set aside until all the water has been absorbed, about 5 minutes.
Melt butter In a small shallow pan over medium heat. Add onions, season with salt and pepper. Saute until onions are soft.
Stir onions, nuts, preserved lemon, and parsley into couscous. Fluff with a fork. Serve.
