
We don’t eat a lot of sausage in our house so processing large amounts would be wasteful. Also, I don’t like the additives and preservatives found in store bought sausage, so this fits the bill. It also makes fantastic sandwiches or you can fry it crumbled or rolled into balls and use it as the meat base for spaghetti.

1 lb ground beef (you can do this yourself with a chuck roast or buy already ground. Don’t buy lean meat…you need the fat to bind)
1 lb ground pork (again, either buy a pound of ground pork or grind up a few pork chops or a pork butt)
1/2 cup fine bread crumbs
Italian seasoning or a combination of sage, oregano, salt and pepper to taste (I usually use about a tablespoon of Italian seasoning or a little more)
Directions
If not already ground, grind beef and pork fine. Add bread crumbs and seasoning. Shape into either logs or patties and fry over medium heat until done.
