I am looking for main dish recipes that include quinoa. I searched for quinoa and only found a total of 3 recipes containing it. I have never had it but I know that it is a great alternative to rice and meat. Thanks!

I have only made it once, but everybody really liked it! All I did was cook it according to the box with chicken stock, salt and pepper, and some frozed peas thrown in. Super fast and healthy!

The other thing which can be done with quinoa is to add it to soups, stews and such where the addition of the small grain would either not be noticed or would enhance the dish.
It pretty much disappears in soups if they are cooked for a long time. It can also be added to meatloaf successfully, again disappearing, in case you need to hide things from picky eaters.
We found quite a few things to add it to when we needed to add protein to the diets of my elderly parents. They never knew.

I love to put quinoa in when I make quesadillas. Little cheese, refried beans, and some quinoa and that is a good quesadilla.
