
A fast and easy recipe to use all those cucumbers in your garden! Works best with smaller cucumbers.

Prep Time: half hour/and time for mixture to cool Cook Time: 10 minutes/ until mixture come to a boilIngredients
7 Cups cucumbers (sliced thin)
1 cup onion (sliced or diced) I like sliced
2 cups sugar
1 cup white vinegar
1 tsp. salt (I use kosher)
1 tsp. celery seed
Directions
Mix sugar,salt and celery seed together; add vinegar. Stir until sugar melts. Bring the mixture to a boil; remove from heat, let cool. Once cool, add to jar with cucumbers and onions. Wipe rim of jar and place on lid. Place into refrigerator. *It will look like there isn’t enough liquid, but the cukes will go into the liquid…like magic. Ready to eat the next day…but better if they set a while.
