Salmon Loaf

A wonderful salmon loaf that makes a filling meal with egg gravy sauce.

Difficulty: Easy

Servings: serves 8

Cook Time: 1 hour  

Ingredients

Salmon Loaf:

1 large can red salmon (can use pink)
1/2 teaspoon salt
1/4 teaspoon paprika
1/4 teaspoon pepper
3 tablespoons lemon juice
3 egg whites (beaten)
1/4 cup melted butter or margarine
3 egg yolks (beaten)
1 1/2 cups firmly packed soft bread crumbs
1 1/2 cups scaled milk

Egg Gravy Sauce:
4 tablespoons butter
4 tablespoons flour
1/2 teaspoon salt
dash pepper
2 cups milk
3 hard boiled eggs

Directions

Salmon Loaf Directions:
Remove skin & bones from salmon and mash very fine.

Mix salmon, paprika, pepper, salt & lemon juice, melted butter, beaten egg yolks and bread crumbs.

In separate small bowl, beat the egg whites stiff.

Add hot milk to salmon mixture and fold in stiffly beaten egg whites. Make sure this is folded together well.

Pour into greased loaf pan.

Bake at 375 for 1 hour.

Egg Gravy Sauce Directions:
Cook the 3 eggs until hard boiled stage. Remove from heat and peel.

Melt butter, add flour, seasonings and blend well. Add milk slowly, stirring constantly. Cook over low heat until thickened.

Cut eggs in small pieces and add.

Put egg gravy sauce over each slice of salmon loaf on your plate.
