
This is the best summer snack. It’s cool and refreshing, yet the beans make it substantial enough to fill you up.

TEXAS CAVIAR
1 can black beans, drained & rinsed
1 can white beans, drained & rinsed
1 can diced tomatoes
4 green onions, thinly sliced
2 garlic cloves, minced
1 green pepper, finely chopped
1/2 cup chopped red onion
1/4-1/2 c. chopped fresh cilantro
1 cup picante sauce
juice of one lime
Directions
Combine all ingredients and mix lightly. Cover and chill at least 2 hours or up to 24 hours, stirring occasionally. Serve with tortilla chips or rolled in soft tortillas.
