The Motherlode Layered Cookie Bars

These bars are amazing. They’re like a brownie between cookies. So rich but so good.

Difficulty: Easy

Servings: 24

Layer 1: Sugar Cookie
1 Roll Pillsbury Sugar cookie Dough

Layer 2: Double Chocolate Chip Cookie
1/2 c. butter
1/2 c. sugar
6 Tbsp. brown sugar
1 egg
1/2 tsp. vanilla
3/4 c. + 2 Tbsp. flour
1/2 c. + 2 Tbsp. cocoa powder
1 tsp. baking soda
1/8 tsp. salt
3/4 c. chocolate chips

Layer 3: Peanut Butter Cookie
1 c. peanut butter
1/2 c. sugar
1 egg

Layer 4: Chocolate Chip Cookie
1 stick butter
6 Tbsp. sugar
6 Tbsp. brown sugar
1 egg
1 1/2 tsp. vanilla
1 1/4 c. flour
1/2 tsp. baking soda
pinch salt
1 c. chocolate chips

Line a 9×13 pan with foil. Press the sugar cookie dough into the pan.

Combine the ingredients for the double chocolate chip cookie layer and press on top of the sugar cookie layer.

Combine the peanut butter, sugar, and egg and press over the chocolate dough.

Combine ingredients for the chocolate chip cookie dough layer and spread evenly over the peanut butter cookie layer but do not press, just leave it uneven.

Bake 35-60 min. or until the center of the dough is mostly cooked through. Edges will be brown. You can cover the pan with foil during the last 15 minutes of baking. Let cool completely. Drizzle with 1/2 c. melted chocolate, if desired.

These sound just amazing! One question – would it serve any purpose to chill the dough between the layers being added??
