
This is not the traditional Italian Tomato Salad that I was taught to make, but this version is definitely the most popular!

Ingredients
fresh tomatoes, chunked
sweet onion, thinly sliced
cucumbers, halved and sliced thinly or chunked
bell pepper, in strips or chunks
hot banana pepper, in strips or diced (optional)
Fresh garlic, thinly sliced or minced (lots!)
oil & a touch of vinegar OR your favorite Italian dressing
basil & oregano (dried or fresh) to taste
Directions
Combine all ingredients and let stand at room temperature for at least 1 hour, stirring gently once or twice.
