Ulrike's Mom's Slow Cooker Potato Soup
This is a delicious, creamy, hearty soup. My mom found the recipe in a magazine 12 years ago, modified it slightly, and everyone who tries it loves it.

Difficulty: Easy

Servings: 10-12

Prep Time: 30 min   Cook Time: 6+ hours  

Ingredients

8 cups potatoes, peeled and diced
1/3 cup onions, diced
1/2 lb bacon, cooked and crumbled

3 cans chicken broth
1 can cream of chicken soup
1 8 oz package cream cheese
1/2 t. ground pepper

Directions

Combine broth, cream of chicken soup, cream cheese and pepper in crock pot (if you dice the cream cheese first, it goes together better). Add potatoes, onions, and bacon. Cook on low all day.

    This is GOOD! I got it into the crockpot as soon as I could after I saw it today! It’s almost done and it’s delicious – has slightly creamy broth but not thick which will be perfect for the varied opinions in my house LOL. YUM! I added a little more onion and some celery and celery leaves and some shredded carrot. Thanks for sharing – it’s keeper!

    Holy Taters, is this good. I made it last night ’cause it is probably going to snow today which equals power outage. The recipe makes a huge amount. I added some dried dill weed and that was nice. This is not too salty and not to onion-ish. I will make this again.

    Yet another kudo for this recipe. I shared the link with a friend who made a double batch for her American Legion’s Sunday meal that’s offered free to members. She says it was a huge hit and every drop was eaten! I’m making a triple batch next week for lunch for a training at work.

    Totally delicious! I added flour/water to thicken it up a little at the end but basically followed recipe exactly. Added some dried chives for pretty color in the bowl. 🙂

    ok thought it couldn’t get any better OR easier but today I used a bag of thawed O’Brien potatoes, cut out 1 can of broth and the bacon, and added a pound of Velveeta at the end. WOW!

    I know it looks like I am obsessed with this recipe LOL! Have worked up a 15 and a 17 quart version that can be done in 2 steps, finished in a Nesco roaster. We served it here at the office last week. Put in extra bacon. It was INHALED.
