Amish Cinnamon Rolls

2 cups milk,scalded   1 tsp. salt       1/2 cup warm water

1 cup crisco              1 cup mashed potatoes     2 eggs,well beaten

1 cup sugar               2 tbl. yeast{2 pkg,}           7 1/2 cups flour

Mix shortening,sugar,salt and mashed potatoes.Pour hot milk over it. Mix and cool to lukewarm. Dissolve yeast in warm water and let sit 10 min. and add to the first mixture. Add eggs and flour and knead till smooth. Let rise in a greased bowl until double. Punch down and let rise. Knead again. Roll into 2 rectangles. Spread with butter,sprinkle with b.sugar and cinnamon.Roll and slice and bake in parchment  pans for easy cleanup. Let them rise till double. Makes 2 9'' pans plus 1 large deep jelly roll pans. Bake 30 min.@ 350 degrees.  Ice with a butter icing with carmel extract or vanilla while warm. In place of crisco,I use butter.Get ready for the compliments-you'll be everyone's friend -or you'll have unexpected company by concidence right after they come out of the oven. They are so light, my husband's fav! Better than Cinnabon.Hungry

Oh, my…  These DO sound wonderful!  Guess we are going to have some cinnamon rolls this winter also!  You know, in the interest of supporting a fellow chicken.  Just because it's the right thing to do…   French

Pete-I just had the Amish put siding on my house and a tin roof in November. I made these rolls for the 6 guys to have for a treat. They goubled them up like crazy. We bought pizza 2 days in a row for them,also.

They really loved  the pizza. I'll post a Apple Pudding Cake that I also made for Benny Yoder's birthday. You can double the recipe for a large crowd like I did. My Amish friend took most of the birthday cake home for his 7 kids and wife. This Amish carpenter,Benny was so kind and willing to go the extra mile for me. He has a great sense of humor.Chef
