Apple Streusel Coffee Cake
2 1/4 cups flour
3/4 cup sugar
3/4 cup butter
1/2 tsp. b. powder
1/2 tsp. b. soda
1 egg,beaten
3/4 cup buttermilk
1 can {20 oz.} apple pie filling, or homemade
1/2 tsp. grated lemon rind or 1/2 tsp. cinnamon
1/3 cup raisins {optional}
Combine flour and sugar in a lg. bowl. Cut in butter until mixture is crumbly; set aside 1/2 cup of the mixture aside. To reminder, add the b. soda and powder; set aside.
Combine egg and buttermilk; add to dry ingred., stirring until just moistened.
Spread 2/3 of batter over bottom of well greased 9-in. springform pan. I use a 9-in. Pampered Chef deep
dish. Combine pie filling, flavorings {if desired} and raisins.
Spoon over batter. Drop spoonfuls of remaining batter over the filling. Sprinkle with reserved crumb mixture. Bake 60-65 min. at 350 degrees. I use no mixer with this-just wooden spoons. Can use different fruit fillings. I have one in the oven now. Yum!!! Enjoy!! Alanna

When I baked this cake today I used the spray for my stone and the crust and bottom where a little darker than usual, I think next time I'll use butter or oleo to grease it and cut back on the time. probably want to check it after 45min-each oven is different!

You baked it on your stone and not in a springform pan?

Yes I baked in my Deep Dish Stone-10''x2'' round. I use that stone alot especially now it's just the two of us here at the farm. Makes great curly fries-use your apple peeler to do potatoes, toss with oil and herbs and bake! Yummy! Great for homemade bread or apple crisp, also Taco Pie. Also fish is great baked in the stone-keeps it moist. Also makes a great dish for mini meatloaves with a brown-sugar glaze.!

Ack! I was thinking flat stone! That probably would not have been a good idea!!! I do have a stone 9x13 that I haven't really used for much…….need to get that out and put it to use!

Baking stones are fabulous! I really like my bread baked in a stone loaf pan! The crust comes out tender.

I used to sell P.Chef products for 10 years. I use my flat stone occasionally, but my 9x13 baker and my deep dish weekley. I make my double recipe cornbread in my deep-dish it comes up so high and moist-reminds you of a cake. Slather that with butter-oh my gosh-it's so good. If you ever make any crescent rolls they do bake up flakier on a stone rather than a reg. cookie sheet. When I bake my homemade nut rolls I usually make 14 lg. ones at one time because they frreze so welll. I usually prefer the looks of the rolls that are baked on the stone instead of the cookie sheet. If anyone wants the recipe,I would be glad to post it.

Alanna, you must not have figured out by now………..we LOVE, LOVE, LOVE new recipes!!!!!
I use my stone for baking all my free form loaves of bread, pizzas……..and I also use it in the oven to put my glass pans on for baking. It keeps the heat regulated under the glass. I'm pulling the 9x13 out and getting it seasoned! So many things I can be using that for!!

Yes, Alanna, I second that! New recipes are always of interest to me, too!
I have a P.C. round deep dish baker. Would you share how you use it?

Also, I wanted vto mention if you were'nt told Never put anything frozen on your stone. The cold item plus the heat from your stone could break or weaken your stone. I was one of the first people in my part of the state to do P. Chef . I never had a problem booking parties, because I made them fun and didn't force people to book with me. I also threw some catering ideas in my show that were simple and easy to do like how to make a mushroom out of a potatoe with a apple corer.etc. I love to cook and have people in -too bad you gals aren't closer. Maybe we could do a roadtrip down to W.Va. and meet up with some of you great people.

Alanna, if you don't mind, we could start a topic about the care and feeding of PC stones. There are probably several who have them, perhaps got them as gifts, and would like more info about them. Would you mind answering questons about that in a separate topic?

Alanna, maybe you're closer to Montana? I also would rather cook at home and have guests over (tho, it's sort of a necessity since we're "out there!"
