Applebutter Cake with Black Walnuts and Raisins

My Great-grandmother’s Applebutter Cake with Black Walnuts & Raisins

This cake was always there for company, and always on the Christmas dinner table. That’s how I learned to love Black Walnuts!

2 C Flour, sifted
1 C White Sugar
1 tsp Salt
2 tsp Chinese 5-Spice (or use cinnamon/cloves/nutmeg/ginger)
2 tsp Baking Soda
1 C Raisins (soak in warm water to plump and soften)
1 C Black Walnuts, chopped
1/2 C Butter, softened
2 C Apple Butter

Drain and dry the soaked raisins. Discard the soaking water. Toss the raisins with some of the flour called for in the recipe. (This will keep the raisins from sinking to the bottom of the cake.) Sift the dry ingredients together. In a separate bowl, cream the butter and the apple butter until smooth.

In a large bowl alternate adding the wet and dry ingredients, stirring with a spoon to blend. Start and end with the dry ingredients. When the batter is smooth, add the floured raisins and the chopped black walnuts to the batter, and mix well.

Grease and flour a 9×13 baking pan. Bake at 350 degrees for 50 minutes. The cake should be moist, but the center should be dry when tested with a toothpick.

Frost with homemade cream cheese frosting.

This looks wonderful!  I will definitely try it.  I may sub currants for raisins, as my kids don't like raisins & I therefore don't have any.  Oh – or what about dates?  Do you think they'd be too sweet?  Dang kids.  (Just joking – they are great kids – but I wish I could get them to eat rasins!)  Tammy

I don't know why you couldn't use currants or dates.  I'd still soak them and dust them with flour, but they should do just fine.

Sounds like a cake my SO will fall in love with! I've haven't learned how love black walnuts yetLaugh

I haven't tried them yet – so I'm not sure if I'll love them or not.  It's worth a try.  I like most thing, but last week, I tried pawpaws.  Not so much.  It was the texture and aftertaste that bothered me – and working around those dang seeds.    

Anyway – back to black walnuts – I think they will be great in this recipe and I'm looking forward to trying them.  T

I think the key to using black walnuts is to realize they taste nothing like English walnuts.  You can't compare the two.  If you like black walnuts you can substitue them in many recipes calling for chopped walnuts, but be prepared that the taste will be totally different.  I made banana bread, and added chopped nuts — I assumed they were English walnuts, but I didn't check.  When I ate the first piece of banana bread I tried to figure out what was wrong with the recipe — it tasted strange! Until I realized I'd picked up the and used the container of black walnuts instead.  The bread tasted just right once I realized I was tasting the black walnuts in the bread.

My cousin won the prize for the black walnuts at the festival this year!!!  (The walnuts came from my mom's farm…you can bet I'll be shellin' some of those while home!)  …and my other cousin won a prize for the chestnuts…also from mom's farm…  I'm so excited for those girls!

Tammy – have you ever tried dehydrating grapes into homemade raisins? SO much better and plump and wonderful. And the kids might like em just because they halped make them :)
