Aunt Marie's Frozen Cheesecake

 

2 TBSP Knox Gelatin

1/2 Cup cold water

2 egg yolks

1/2 teas salt

1 pint cottage cheese

1/2 cup milk

1 cup sugar

1/2 teas vanilla

2 egg whites

1 pint whipping cream

 

dissolve gelatin in cold water.  beat egg yolks slightly. add sugar, salt, & milk.  Cook over boiling water until like custard.  add gelatin to hot mixture and stir until dissolved.  cool until mixture begins to thicken.

put cottage cheese thru a ricer.  add cheese and vanilla to gelatin mixture & beat with egg beater (Remember those!) until fluffy.

whip cream. 

beat egg whites until stiff

dry fold whipped cream & egg whites into cheese mixture.

 

roll 20 graham crackers until fine.

1/3 cup sugar

1/3 cup melted butter

 

grease pan & put this mixture on sides & bottom.   save some for the top.

 

thats where the recipe ends.  doesnt tell you to put the cheese mixture into the crust.  And where it's title is Frozen cheesecake – i would assume you then put this in the freezer

What an interesting recipe!  You are probably right that it is poured into the crust then into the freezer.

Unless it was assumed that the cook would know to put it into the oven first!    Laugh

i know Pete… no cream cheese….& no picture to reference

egg yolks are cooked in the "custard" step so it should be ok…. cant see baking it then putting in the freezer….

No, I wouldn't really think so either.  This may well have been one of those status kind of recipes to make just to prove you had a freezer!  Also, cream cheese wasn't really a houshold item until probably the 60's.  We had it in the 50's, but it was not common.  Of course, there could be regional variations on that, too.

Still, a most interesting recipe.  Thanks for sharing!
