3 eggs
3/4 cup bacon grease (must use bacon grease)
1 cup sugar
1 cup brown sugar
3 cups flour
1 tsp baking soda
1/2 tsp salt
1 tsp vanilla
1 cup chopped nuts
Mix ingredients together. Drop by spoonfuls on ungreased baking sheet. Bake 8 – 10 minutes at 375.
This recipe was in a 1970 cookbook published by a club my mother belonged to. The lady who entered this recipe went to our church – I'm sure I ate them!

I wonder if the bacony flavor carries through to flavor the cookie?

Wow. That's an interesting recipe. I'll have to try that. Makes me think about maple-flavored bacon. That's good, so these cookies should be.

I know I ate them (40+ years ago!) but I don't remember eating any cookies that tasted like bacon – as a kid I'm sure I would have said something, and been reprimanded by my mother!

Well, I guess bacon grease is just a smoky flavored lard………rendered yourself when cooking the bacon!

When my BFF was about 12 or 13 she was mixing up the ingredients for cookies and discovered that there was not enough vegetable shortening to complete the recipe. She used bacon grease to make up the lack of shortening. When the cookies were baking and were still warm from the oven they smelled like bacon and had a bacon taste….BUT…..after the cookies were completely cooled they had no bacon flavor or smell. The bacon grease cookies tasted like they had been made with shortening.

I haven't use vegatable shortening in years. Always use poultry fat if I have it or bacon fat. The key to using poultry fat is to refrigerate the flour and the fat and work quickly before the fat melts.

Duck or goose fat makes the very best pastry. refrigerate the fat and store the flour in the freezer. work quickly and don't allow it to get warm before you are ready for the oven.

Bacon fat is just smoke flavored lard. I have made many batches of oatmeal cookies with bacon fat, chicken fat.

If you chill the bacon fat and freeze the flour before you start and work quickly the fat won't melt into the flour.
