Baked Potato Soup

2/3 cup butter or margarine

2/3 cup AP flour

7 cups milk

4 large potatoes, baked, cooled, peeled, cubed (about 4 cups)

4 green onions, sliced

12 bacon strips, cooked, crumbled

1 1/4 cups shredded cheddar cheese

1 cup sour cream

3/4 tsp. salt

1/2 tsp. pepper

In a large pot, melt butter or margarine over medium heat.  Stir in flour, heat and stir until smooth.  Gradually add milk, stirring constantly until thickened, about 10 -12 minutes. 

Add potatoes and green onions.  Bring to a boil, stirring constantly.  Reduce heat and simmer 10 minutes.

Add remaining ingredients; stirring until cheese is melted. 

Serves 8-10.  You may need to add milk when re-heating.
