Kensjewl, I like to do pork BBQ in the crock pot also.  I take a frozen pork butt, pour about 2 cups of apple cider vinegar over it, a tsp of liquid smoke, and a tsp of red pepper flakes.  I start it in the morning, and by the evening, it's ready.  You drain off the liquid, shred the pork with forks (it's usually falling off the bones) and then serve on buns with the sauce of your choice.  This is more of a Carolina style pork, and I like the tangy taste of the vinegar.  :)

     This sound like a wonderful recipe, I love BBQ sandwiches, got to have the coleslaw on top–and this is the time of year those nice roasts will be on sale.

    It is just the two of us, but I usually freeze the BBQ in packets that are just the right size for a meal.

   Thank you, I am anxious to try it. Crock pot cooking is so nice, and the end results are delicious.
