Birds of Paradise

  • 4 to 5 boneless, skinless chicken breasts
  • 2 eggs
  • 3 to 4 T. milk
  • 1½ cups grated parmesan cheese (real grated – not the stuff in the can!)
  • 1 stick butter
  • 1 cup cooking sherry
  • Directions
  • Wash and trim the chicken breasts.
  • Whisk the eggs and milk in a small bowl.
  • Pour the cheese onto a piece of wax paper.
  • Dip the chicken breasts into the egg mixture and roll them in the cheese.
  • Melt the butter in a frying pan on medium-high heat.
  • Put the coated chicken into the pan and brown it on both sides.
  • Then pour the sherry in the pan after the chicken is brown.
  • Cover the pan and let the chicken simmer for 30 minutes.
