Hello A friend of my mom's used to make syrup from apple cores and sugar ( and red food coloring), but none of her kids knew how she did it when I called to ask. But, I found something that sounds similar in this month's edition of Southern Living. It's called brown sugar apple simple syrup.   Said to let cool, put in refrigerator, but I don't see why you couldn't can this do you? When I try this, I will add a touch of cinnamon. Would be good on oatmeal or in hot tea, something like that. Or poke holes over a cake and let it soak in. If it were thicker, it would be great for pancakes or stuffed french toast.

2 cups apple peels

2 cups packed brown sugar

2 cups water

Put everything in a saucepot, simmer until sugar is dissolved.

Oh yum!  Mom used to make this usually on Sundays when she'd make an apple pie — and Sundays were the bread making days.  We'd have french toast with fresh bread usually on Sunday nights and we'd pour this syrup on it!   and I had forgotten all about it!

I would think you would can this like an apple jam, BWB for 10 minutes.  It would be like the caramel apple jam that Suzanne posted last year with the cinnamon…….just more syrupy!

I dry the peels from my apples that I peel with my apple peeler, but the cores I was throwing out to compost — they are a long cylinder shaped thing that don't dry well.  This will make use of every part of the apple now!
