Carrot Cake

 

Mix in large mixer bowl:

2 cups self-rising flour

2 cups sugar

4 eggs

1 teaspoon vanilla

1 teaspoon cinnamon

1 1/2 cups vegetable oil

Beat on low until blended.

Remove from mixer and add (by hand):

3 cups grated carrots

1 cup chopped nuts

Bake 45-50 minutes @ 350 degrees.

 

Glazed Icing

 

1/3 cup buttermilk

1 tablespoon Karo syrup

1 teaspoon soda

1 cup sugar

Cook 5 minutes – stirring constantly – burns easily.

Pour over hot cake – punch holes in cake with fork before pouring icing over.
