I found this quick bread when trying to find a recipe for canned cherry pie filling.  I used the extra filling that was leftover from my canning, but you can use store bought, too.  It's very easy to put together and very tasty!

Cherry Pie Filling Bread

 

1½ hours | 20 min prep

 

SERVES 36, 2 loaves

 

1 ½ cups oil

3 eggs

1 teaspoon vanilla extract

3 cups flour

2 cups sugar

1 teaspoon baking soda

1 teaspoon salt

1 teaspoon cinnamon

1 (20 ounce) can cherry pie filling

1 1/2 cups chopped pecans

 

Beat together oil, eggs and vanilla.

 

Sift dry ingredients together and add to egg mixture.

 

Stir in cherry pie filling and nuts by hand.

 

Pour into 2 greased and floured loaf pans.

 

Bake at 350° for 50 minutes to 1 hour.

John even liked it and he's not really into sweet breads or cakes!  It's a keeper….I'm going to try apple pie filling, too, I've got some left from last year.

Cherry Pie Filling Bread

This bread is delicious.  It is dark, spicy, full of moist cherries and just yummy.  I'm going to make some tomorrow for a friend, this is so good. Chef

I was looking for a recipe that used what I had on hand, and this was it.  The modifications were that I used sugar free cherry pie filling and left out the nuts, and used cake flour although the recipe did not call for that specifically.  I used a quarter cup less of the oil than was stated, since that was all I had.  

It makes two full-sized loaves.  I baked one in a glass loaf pan and one in an old metal loaf pan.  The glass loaf pan took longer to get done in the center.  The recipe called for 50 minutes to an hour, but my baking time was about an hour and ten minutes.   Don't trust your oven, check early.
