For all of you that LOVE Chicken and Dumplings, as much as I do. I experimented and found something neat! As much as I love this dish, I don't like alot of chicken in my dumplings. I don't know why. I love chicken…but found it is the DUMPLINGS I love the most.
So, I had a carton, of Swanson Chicken Broth (regular, but you can use low sodium)…I just brought that broth to a boil…dropped my dumplings in, put the lid on, and then turned it to a simmer for 15 minutes and Voila! They tasted just the same as if I had boiled a whole chicken first. So, now it's quicker and easier and I can have my dumplings the way I like it – chickenless. LOL Be sure to continue to use a large pot though, as mine almost boiled over. LOL

LOL, I found I think it is because I don't like the chicken breast, being sort of dry to me…so to have large chunks of dry-ish chicken unnerved me…I wouldn't mind tiny slivers of tender darker meat…but heck, it's just those fat PUFFY dumplings I want. LOL

When my great-grandmother was quite old she would decide that wearing her false teeth was too much trouble. It drove my grandmother crazy because she had to find food that GGM could eat without teeth. My GM would take whole chickens and cook them in the pressure cooker until the meat was so soft you didn't need to chew. But making all that chicken resulted in a lot of chicken broth, and she would send it over to my house. I was young, newly married with a little one, and there were many nights we had chicken noodle soup without the chicken. I never missed it.

Me too about the breast, I love a good thigh. And I love the doughy chewy dumplins, like my grandma made. Served them in my tea room on fridays, the only day the men flocked in.

I really don't care for dumplings but like noodles with lots of chicken(thighs) , my SO likes dumplings with little chicken. I told him that if he does the cooking( yeah right!) then he can make it his way or he is stuck with whatever I make. He complains my noodles are too thin. I was raised that dumplings were like globs of biscuit like dough. He says his mothers were like wide, thick noodles. I guess what I'm getting to is I don't know reallly have a clue to what he wants!

I use my mother's Dumpling recipe..and I'll have to look at yours Georgia!
My mother preferred them flat, like wide noodles. I don't. I like the big FLUFFY ones..so I add more milk to mine, hoping they WON'T be doughy inside. LOL

okay call me crazy, but a friend told me to do this. I tried it and didn't tell my family and they loved it.
Cut Flour tortillas in strips then 2 inch squares. Dump them in like you would dumplings. Very Yummy and my guys liked it better. When I told them what it was, they were surprised!
