I used the Chili Gravy recipe Pete posted.  Instead of flour for making the roux, I used Clear Jel, an approved thickener to use for canning.  I was making bean soup, so I just soaked extra beans, and this recipe is based on the amount of soaked beans I had left over.  I used the directions at NCHFP for canning dried beans.

Yield:  5 pints

8 c soaked beans (if calculations are correct, it should be about 2 2/3 c. dry beans before soaking)

I doubled the Chili Gravy recipe….using clear jel instead of flour.  Follow directions as listed.

Fill pint jars with soaked beans to the bottom of the neck of the jar.  Fill with gravy mix, leaving 1" headspace.  Remove air bubbles, wipe rims, and put lid and ring on.  PC at 11# for 75 minutes for pints.

CoolI live in Justin Wilson territory. He was quite the character wasn't he? I've never seen the cooking program, but remember the radio program and the albums. Just a tidbit of info for you fans, Justin wasn't actually of Cajun decent, he was from New Jersey! But to all of us here, real Cajun or not, he was and still is the epitome of a true Cajun…a lover of all things outdoors, of family and friends, and oh mon cher, good food!

ConfusedWell, I stand corrected. I sent a friend of mine an email about CITR having Justin Wilson in one of the comments. I told her about being from New Jersey, and she (sooo Cajun)very promptly (and sternly) corrected me. His was born in La., near Roseland. He worked somewhere on the east coast for a short time, and returned home for the majority of his life. Sorry yall, consider me slapped on the wrist! She said if you Google his name there's a great website with recipes and all kinds of neat stuff.
