Here is the version I came up with. Debidoodle adds yours!
Chocolate Coconut Fudge
Coconut filling:
4 cups coconut
1/4 cup light corn syrup
Mix together well. I got my hands right in there to mix all together. Set aside.
Fudge:
1/2 cup butter, cut up
1/2 cup milk
1 (12 oz) pkg milk chocolate chips, or your favorite kind!
4 cups powdered sugar
1 tsp vanilla
1/2 cup chopped almonds (for the almond joy taste!)
Combine butter, milk and chocolate chips in saucepan. Cook and stir on low heat until butter and chocolate are melted.
Pour into large mixer bowl. Add powdered sugar and vanilla; beat at medium speed, scraping bowl often, until smooth. Stir in nuts.
In a buttered 9×13 pan, spread 1/2 of the fudge mixture. Spread the coconut mixture on top of this layer. At this point, I also spread whole almonds all over the top of the coconut (almond joy!). Spread the last of the fudge mixture to the top.
Cover, refrigerate until firm (1 1/2 – 2 hours).

OfflineI didn't see the sweetened condensed version before I made that yesterday or it would have been in there!
There's just a few pieces left! It tasted soooo good for breakfast with a hot cuppa coffee!

OfflineI have a recipe for mounds balls. You might be able to put the filling between two layers of fudge, but they are great by themselves.
1 bag of Mounds coconut. ( I buy mine at Walmart, any brand will do but if you want true mounds flavor, I'd use the Brand)
1 can of Eagle Brand milk ( I have used store brands but they are runnier)
powdered sugar
melting chocolate or a bag of semi sweet chocolate chips
Mix coconut and milk together add in powdered sugar to make it stiff or to hold shape. I make mine into balls and refrigerate until set, then dip in melted chocolate. Keep stored in fridge. They don't last long.

Powdered Sugar — I add it 1/4 cup at a time until it will hold it's shape in a ball. It depends on the brand of milk and maybe the humidity too. It is always different. I just mix until it holds shape. It's good even if you have to eat it with a spoon and no chocolate. YUM

Well I've done two versions so far, gained 50 pounds, and can't pick a favorite!
In the first it was good old fashioned cooked fudge, grannies recipe and I promise I will post it later today. I'm only half here right now, sinus meds are not working!
I used the condensed milk version for the coconut both times.
the second one was the marshmallow creme version of the fudge, very nice as well.
I'll be back when my brain comes out of this fog to post complete recipes.
